Slow Cooker Sunday

While Husby was off beachin’ it in his own mind, I was assembling food for the masses. Okay, for four. Well, technically for two. But it was intended for four. Kids and their aversion to red pepper flakes…

Please enjoy this weeks Slow Cooker Sunday recipe.

Slow Cooker Honey Sesame Chicken

What you will need:

1 small onion, diced
2 cloves garlic, minced
1/2 cup honey
1/2 cup soy sauce
1/4 cup ketchup
2 tablespoons vegetable oil
1/4 teaspoon crushed red pepper flakes
1 lb boneless, skinless chicken breast
Salt and pepper, to taste
Sesame seeds

In a medium bowl combine onion, garlic, honey, soy sauce, ketchup, vegetable oil and red pepper.

Season chicken with salt and pepper, to taste. Place chicken into the slow cooker. Pour your honey mixture over the chicken breasts. Cover and cook on low heat for 3 to 4 hours.

After your initial cook time, the chicken should be tender and easily shredded with two forks. Once shredded, re-coat the chicken in the sauce, cover and continue cooking for approximately 30 more minutes.

For serving, over white rice with a sprinkling of sesame seeds would be the norm. This Sunday I had a craving for some steamed broccoli and I think it made a most delicious duet.

Served on a plate my tween made me when she was but a little one.
