Slow Cooker Honey Sesame Chicken
What you will need:
1 small onion, diced
2 cloves garlic, minced
1/2 cup honey
1/2 cup soy sauce
1/4 cup ketchup
2 tablespoons vegetable oil
1/4 teaspoon crushed red pepper flakes
1 lb boneless, skinless chicken breast
Salt and pepper, to taste
In a medium bowl combine onion, garlic, honey, soy sauce, ketchup, vegetable oil and red pepper.
Season chicken with salt and pepper, to taste. Place chicken into the slow cooker. Pour your honey mixture over the chicken breasts. Cover and cook on low heat for 3 to 4 hours.
After your initial cook time, the chicken should be tender and easily shredded with two forks. Once shredded, re-coat the chicken in the sauce, cover and continue cooking for approximately 30 more minutes.
For serving, over white rice with a sprinkling of sesame seeds would be the norm. This Sunday I had a craving for some steamed broccoli and I think it made a most delicious duet.
